200ml fresh lemon juice
500g fine sugar

To make the Drink (produces 850ml, enough for 10)

150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Instructions

For the Cordial: Put every components into a saucepan, heat until it reaches a light boil, agitating so the sugar melts. Then, take off the burner and leave to reach room temperature entirely. Transfer into an sealable bottle, cap it and refrigerate it in the fridge, where it will keep for about one month.

To make Premix: Mix the specified liquids into a large bottle, allow it to infuse for 60 minutes, then filter it best through muslin, so it's completely strained.

To serve: Measure 85ml of the cocktail base to a mixing glass filled with ice, and stir lightly for about 60 seconds to cool it down. Filter into a frosted cocktail glass or a similar vessel, garnish with the cranberries and complete it with a light spray with the mandarin essence above the glass.
